Makes 1 Cup and a half
12 oz dried figs, stems removed and diced
1/4 cup onion, small dice
1 tsp serrano, minced
1/2 cup water
1/4 cup agave
1 TBSP lemon juice
6 thin slices of ginger
Combine all of the ingredients into a pan and bring to a simmer for 15 minutes, let cool for 30 minutes.
Purée and store.
